The Ginger Peach Stinger Tea Mocktail

Ingredients

  • 3 oz. brewed and chilled Grace Farms Ginger Peach Iced Tea
  • 1 oz. peach puree (recipe in directions below)
  • 1 oz. fresh lemon juice
  • ½ oz. hot honey
  • Ginger beer, optional
  • Ice
  • Peach wedge and lemon wheel, for garnish

Directions

  1. Brew and chill the tea. Brew 1 bag of Grace Farms Ginger Peach Iced Tea in 1 quart of water using your preferred hot, sun, or cold brew method. Allow the tea to cool completely, then refrigerate until chilled.
  2. Prepare the peach puree. Peel and pit fresh peaches, then blend until smooth in a food processor or blender. When fresh peaches are unavailable, substitute an unsweetened store-bought peach puree.
  3. Assemble the drink. Fill a tall glass with ice. Add the peach purée, lemon juice, and hot honey, stirring until combined.
  4. Finish and serve. Pour in the chilled iced tea and stir gently. Top with ginger beer, if desired, and garnish with a peach wedge and lemon wheel. Serve immediately.

One brew bag of Grace Farms iced tea makes 1 quart (32 ounces) of iced tea. Each standard drink uses 3 ounces of tea, so one brew bag provides enough for about 10 full drinks.

Make a Full-Quart Batch

Use the full brew bag to prepare drinks for a gathering. This batch makes 10 standard drinks and one smaller serving.

Batch ingredients

  • 1 quart (32 ounces) brewed and chilled Grace Farms Ginger Peach Iced Tea
  • 1⅓ cups peach purée
  • 1⅓ cups fresh lemon juice
  • ⅔ cup hot honey
  • Ginger beer, optional
  • Ice
  • Peach wedges and lemon wheels, for garnish

Batch directions

  1. Brew and chill the tea. Brew 1 bag of Grace Farms Ginger Peach Iced Tea in 1 quart of water. Allow the tea to cool completely, then refrigerate until chilled.
  2. Blend the hot honey. Add the hot honey to a large pitcher. Whisk in a small amount of the brewed tea until smooth. This helps the honey incorporate evenly into the chilled ingredients.
  3. Complete the batch. Add the remaining tea, peach puree, and lemon juice. Stir thoroughly, then cover and refrigerate until ready to serve.
  4. Pour and garnish. Stir the batch again before serving, as the peach puree may naturally settle. Pour over ice, top each glass with ginger beer if desired, and garnish with a peach wedge and lemon wheel.

Why These Flavors Work

Peach puree builds on the tea's fruit character and gives the drink a smooth texture. Fresh lemon adds brightness and balances the sweetness, while hot honey complements the ginger with a warm, lingering finish. Ginger beer adds bubbles, lift, and another layer of spice.

Make It Your Own

  • Keep it light: Substitute sparkling water for the ginger beer.
  • Reduce the heat: Use less hot honey or replace it with regular honey.
  • Emphasize the ginger: Add more ginger beer or garnish with fresh ginger.
  • Add an herbal note: Finish with fresh mint or basil.
  • Create a smoother texture: Strain homemade peach puree before using it.

The sweetness and spice of peach purée, hot honey, and ginger beer can vary. Taste the drink before serving and adjust the lemon or hot honey as needed.

Make-Ahead Tips

The tea and peach puree can be prepared in advance and refrigerated separately. For the brightest flavor, squeeze the lemon juice and assemble the drink closer to serving time.

For a gathering, combine the tea, puree, lemon juice, and hot honey in advance and keep the batch chilled. Stir well before pouring, then add the ice and ginger beer just before serving.
